Title: Is variety important?

This is probably a dumb question, but is it healthy/safe to eat a limited variety of food? For the past month or so I have been eating pretty much the same thing everyday. For breakfast and dinner I eat ia ota, basically it's cubes of raw meat or fish marinated in lime juice and sea salt with vegetables and coconut. I mostly use wild seafood and occasionally grassfed bison or lamb heart and I make 2 versions. One is with tomatoes, cucumber, green onions and jalapeno or habanero and the other is with pineapple and dragon fruit and I add fresh coconut cream. Between the 2 meals I eat tropical fruits like banana, papaya, guava ect. Eating like this makes me feel much better than I have in many years. I have a lot more stamina, I feel stronger, I think more clearly and sleep better plus my muscles are getting bigger without me changing the way I exercise.

 The last few sentences answer your question. You'll have a problem if what you are eating isn't serving you, and it'll become apparent when you stop feeling good.
Some people follow far more limited diets and do just fine.

I do better with salt.

I like tasting a wide variety, different fruits every season. 

I used to taste more variety of meats and fish, but lately I stick to the ones I really like.

Travel will make you taste more.

Go the the wet market more often.

Or go to your online shops.

It takes effort and money and time.

Yes, I believe variety is important.

I was under the impression that only iodized salt was poison. I use sea/rock salt and haven't noticed any ill effects. In fact, I don't function well enough without it.

Try to completely stop eating extra salt for some time. Then after some weeks/months, eat something very salty. For me, it tastes disgusting.
I have now been eaten quite a lot of salty food because I was travelling and could not eat my normal food, and I am amazed how used I have become to the taste of salt.

I think variety, but local and seasonal is paleo. Eating foods imported more than 500 miles away may be considered unpractical. Just add some organ meats, seafood, heirloom fruit every time is in season near your area.

Maybe trying to import food from just one hemisphere. I mean, if you live near the poles eat just food from that hemisphere and do not eat tropical fruits or something like that.

I live in the western US and most of my coconuts and fruits are from Florida. It's still a long distance but the same country.

i read that we need at least 15g of salt per day just to be able to make enough HCL to digest food

I've read that too. Don't remember where but the chloride in the sodium chloride is supposedly used in hydroCHLOR(ide)ic acid. Besides. I like the taste of (celtic sea) salt!

Yeah, that's most probably true. But, "15" grams of salt minimum to develop HCl?
