Title: Killer Middle Eastern Feast!
Post by: Satya on July 21, 2008, 04:42:14 am
Oh yum, this was such a good meal. Lamb leg ground with marrow chunks, egg yolks, anchovies, parsley, garlic, red onion. Along side is a raw tahini hummus and tabouli sans grain. The pickle and hot pepper were from a jar, but otherwise, it was raw and fabulous. The lamb tartare I liked better than carpaccio. Very creamy!

Thank you, Keith. And you may want to try something like the tartare for more fat & calories. I mixed in a food processor:
1 lb of lamb leg, chopped 6 2"x1" marrow chunks 4 egg yolks (I raise a few Silkie Bantam hens for eggs, so they are super pristine eggs) 6 anchovies some parsley, and onion from the tabouli garlic cumin
I had been in kind of a carpaccio rut lately - and I am not one to stick to the same fare everyday. I will, however, gladly eat more of this tomorrow, as I have leftover meat since I ate earlier today too. Be well and may the force be with you!

You would ask, Kyle. I don't remember exactly, but it had sesame tahini, really thick almond butter, garlic, juice of lemons, probably fresh chives from the garden. Stuff like that.
