Raw Beef Brain Ceviche Kinilaw (Kinilaw means: Kinain ng Hilaw = Eaten Raw)
I went to the wet market 6:30 am this morning and was able to buy beef brain for 100 pesos, including part of the skull. Back home it was time to make some fresh beef brain kinilaw – ceviche. Here is the simple recipe.

Texture is like leche flan / flan. Taste is good, great, refreshing. It's not something I crave everyday, but when I don't eat it for a few weeks I think about it.
Refrigerated and it seems like a desert treat. About being smarter, cleansing and great diet made me smarter.

An other good Ceviche is this one:
Shrimp Ceviche 1 lb. popcorn shrimp, thawed (or fish, scallops, oysters, etc.) Juice of 3 limes Combine these together thoroughly in a ceramic or glass bowl. Cover, pop in the fridge and ignore for 24 hours. The lime juice “cooks” the seafood and preserves it. 1/2 red onion finely chopped 1 or 2 jalapenos chopped, depending on taste (for hotter use habanero) 3 fresh tomatoes chopped 1 tsp. garlic powder 1/2 cup chopped cilantro Juice of 3 limes Salt and pepper to taste.
Take the shrimp from the fridge and drain thoroughly. In some of the ceviche recipes we’ve found, they do not call for pouring off the first lime marinade. But, we found the flavor is much fresher when you do. Add the remaining ingredients and refrigerate for at least two hours before serving. The thicker the seafood the longer it takes to marinade. Place in tall cocktail glasses for a pretty presentation or over a bed of salad greens with slices of avocado.

My four years old son eats just plain raw brain everyday. I blend the brain with heart, kidney, liver , stomach, eyes and other glands for his breakfast.

After months of searching for a source for beef brain, I got some this morning. Yay! The butcher was so excited that I was buying brain... he loves (cooked) brain, and was rambling on about his favorite (cooked) brain recipes. He's not my butcher, so I didn't mention raw to him.
I ran right home and made some brain ceviche. WOW! it's my new "favorite" food. Even plain brain without the lime juice is very tasty and has the mouth-feel of a delicacy.
