Title: Seasonal Foods

I'm interested in learning more about the seasons and the plant and animal foods that they bring to bear. Please share about your bio-region and foods that are available based on the seasons.
I'll start with the few foods I have experience with. With hope, this list will expand.

I've been appreciating seasonal foods and the old traditions that incorporate them. Here in Germany, Spring is Asparagus season with asparagus festivals and celebrations. Of course early summer is strawberry time followed by various other fruits/veggies. But Fall, there are Apple festivals, Pumpkin/squash festivals, and Kale celebrations! It is also mushroom season! The markets have an abundance of heirloom roots and wild game. It seems that the older generations reveled in the seasonal foods. There was a time of year for everything.
