Title: Wild Deer Eating Advice Wanted

Hi everyone,

I'm trying to establish a source of wild deer from Isabela province.

The hunters can get wild deer in the mountains, bring it down to their town, and send it by bus to Manila which is a 12+ hour trip.

Any suggestions for storing, preparing, eating wild deer?

Dos and Don'ts?

Which parts are the good parts?

Any precautions about eating wild deer?

I'm  thinking 1 deer a month should be a good thing. (depends on how big the deer comes out).

I don't do anything special with deer. Every bit has it's own peculiarities, the backstrap meat is obviously super tender. All of it will be much more flavorful than cow, flavor will depend on diet.

Are they giving you the organs? are they dressing it or just bringing you the carcass/quarters?

I'll request dressing and cut in quarters and all the organs. 

My driver will be there tomorrow. We will talk over the phone.  Any details you suggest as important I request the hunters?

Getting wild deer is all so new to me.

I just sent my driver on to take a bus ride to his 2nd cousin in Isabela where they hunt for a living.
He will arrive by morning tomorrow and then we can talk about logistics of butchering and transporting carcasses.
I lent my driver a camera.
Could be interesting.

Oh my goodness Edwin! This thread makes me want to IMMEDIATELY get on a plane to Phillippines (sp?). Haha you really live in paradise.

I searched for "Deer" because I came across an online meat retailer over here in Hong Kong that has "Game Meat - Deer" listed.

http://www.leosfinefood.com.hk/meats/game-meat.html (http://www.leosfinefood.com.hk/meats/game-meat.html) from New Zealand "Duncan" brand. I know most of NZ's beef are grass-fed but I'm not too sure of their deer...

Anyone here know whether Deer is grass-fed in NZ as well? usually?

@GoodSamaritan: Any updates on the deer meat? You tried it?

I suggest you eat it Raw.

Do's: Use a knife and fork.
Don'ts: Don't use a spoon or chop sticks

Jesus, would you like some whine with that cheese chris lol?

The marrow is amazing GS, I'm not particularly fond of the liver of our deer here, but yours probably kick ass in the jungle/highlands. The brain will be fantastic, I'd eat the eyes just for the telomeres. The sweetbreads of course are phenomenal! The backstrap/tenderloin meat is like butter, so tender!

The heart will be delicious. Won't be much rib meat but that will be tender.  The tongue of course is yummy, though again tiny.

Enjoy, and don't forget to thank the deer for providing your family nourishment at the cost of its life!

Next time you have deer served at your house, I want an invite! You sold me on deer! My mouth was watering when I was reading your post! Question: Where can I find "Wild Deer" meat for sale? Do you have a source that ships? I'm talking parts, not the whole bloody thing. I don't have room in my ice box for that!
