no fresh fat is smelly, unless rancid.   Suet is dry and flaky, waxy when chewing, never eat it.   yes, the fat on a steak is back fat, however, the closer you get to the meat itself, there will be a layer of connective tissue which is tough to chew.   

 You can always get a small hand crank meat grinder that suctions onto your smooth counter and you can grind your own fat ( meat too, although not a fan of the feel of ground meat) and then warm it in a pan of water ( place fat in bowl first ) till it melts or partially melts and then eat along with your meat.    Hard to know where your natural stop is though when eating this way.

I think its the fat mostly on the carcass after they pull off the hide.  They can slice slabs off depending on how much fat the animal is carrying.

See if you can find a slaughter house/processing plant and visit it introducing yourself as someone who would like to buy excess BACK fat and marrow bones, liver, kidneys, maybe brains, pancreas, tongue, testicles, heart, thymus.  and if possible fresh, not frozen.

There are pitfalls on the Wai diet.  I tried it some years ago.

Fat and sugar glycate, and and cause problems on a cellular level.  Read about it.

Fruit has high amounts of fructose, can cause fatty liver. 

Moderator back then had to consume extra white sugar mixed into his orange juice to stay full of energy.  Should tell you something.

So, pay attention to any signs, and, they, like many deficiencies, can take a while to evidence.

all good information.  You might go back and ask the first dentist if indeed he felt soft spots ( if he can remember  ).  Yes Bruxxing will tear apart teeth.  Did your dentist not suggest a night guard for you ?

glad to hear others chime in about fat and protein...  Early man Most likely had availability to plenty of fat.   I have availability also to plenty of fat, and choose to eat plenty with my meat.  My guess is that most would choose the same when the fat is a tasty as the fat I get or the fat that came off of a large animal after a fresh kill back then.

 I would love to be able to read more data on the balance of sodium as I've dropped salt now for maybe a month and do better with out it.  I know that Paleomedicina folks do you salt, but then they're not raw.

@ProsPerryT I would look at my water source. When I was drinking lots of carbonated mineral water my teeth were regressing a lot. Even normal mineral water has plenty of inorganic minerals which to my understanding are everything else than beneficial.

@van since you mentioned green apples, do you think they are beneficial for the teeth due to their malic acid content?

Not beneficial, but any apples leave a residue of sugar for bacteria to feed on,, unless rinsing well after eating.

I'm guessing you didn't eat enough fat. ( especially if you relied on expensive marrow bones for fat )   I recently cut back on my meat consumption and increased fat.  So easy to think we need large portions of meat when reading other's accounts.  Also for the last two weeks have cut out salt.  No longer have problems with water not quenching my thirst.  At first everything was bland.  But after a few days the taste buds reignited.  Feel much lighter as a result. 
    One experiment you can try is to catch your urine and look for sediment, which in my case appeared to be uric acid crystals, as a resultant from excess protein.  Let it sit for a few hours to see what settles.

go to the internet and look at the various sites where carnivores and zero carb eaters post.  You won't find much success stories here, as most who post simply  haven't experimented to the depth needed to discover what is possible. 
    Zero carb diets NEED healthy fats, and lot of them,,   and many are realizing organ meats too, but not everyone agrees on that one.

My experience with muscle testers is that they have been bogus.  I'm sensitive enough to know when someone is pulling down on my arm and when someone is faking it.  The only way to truly muscle test is to do it blind folded and repeatedly.  Which means you don't know what your holding nor does the person pulling down on your arm. and then to do it ten times, alternating with other foods. 


    You have a bacteria in your mouth that is feeding on the foods you are eating.  Their excrement is acidic and destroying the enamel on your teeth.  They are also forming colonies under your  gums and proliferating every ten minutes. 
   Find out either what is allowing them  in the first place  (immune system ) or take away their food source. (Green apples for instance and the remaining sugars in buttermilk that haven't been converted into lactic acid) or up you oral cleansing to where there is nothing left for them to feed on.

I take a different side of the opinion wall...  Most animals are eaten well before they freeze, especially organs as they are prized..  I don't like anything frozen.

  Look for thicker pieces of liver and the darker the better.  You can hang it in the fridge for a week or two and it takes on a different texture and taste.  Keep trying it.  It's worth it.

dairy, besides being low in mg. is full of sugar or acids if fermented.  Always rinse out your mouth with salt water after consuming.  Get fuzzy floss and use daily.  Every week make a paste of baking soda and coat the fuzzy floss with it and floss under the gums.  Mild abrasive yes, but will clean very well.  Get soft bristle tooth brush and brush at a 45 degree angle gently, working the bristles under the gums.  Look up MMS and buy some to brush teeth with. 
    I've been close to zero carb for years now and carnivore for over a year, teeth better than ever.  There's no sugar for the bacteria that cause dental carries to feed on.  Keep your mouth clean throughout the day, especially your tongue.

local raw beef is some of the best considering the year round grass Hawaii has.  Most supermarkets have it, just call around.  There are also island slaughter houses to call.

Yes,, and if you care to try,,  finely shred or grind  coconut meat so that you can such the 'milk' out of it discarding the pulp..  You'll most likely notice, as I did, that it's only palatable for only so many mouthfuls.   So easy to take in more when it already sitting in a cup ready to swallow down.

subscribe to Dr. Paul Saladino's Utube channel to watch his latest question and answer video on what might be missing on a carnivore diet.  As an MD eating carnivore, I think his perspective is valuable.

most here could use all the acid their stomachs produce to digest good portions of either cooked or raw meat.  To include vegetables, either cooked or raw,  is only going to neutralize to some extent the acidity of the stomach.   If you want to eat vegetables, eat them sparingly with protein, or as a snack or separate meal, or with some easily digestible proteins like aged cheeses.
  It's our acculturation that keeps us eating our meat with veggies ( besides our desire for taste or carbs like potatoes etc...

the more oily or fatty the fish is, the more oxidized oils or fats you'll be ingesting.  Fish are mostly pufa rich, which go rancid very quickly.
  I share the opinion that traditionally fish was fermented or dried as a means to stay alive when sources of food were not available.  And, yes, one can develop a taste for it in spite of the rancid fats.  But only until recently has there been an understanding of how damaging rancid pufas can be.

another case of AV steering others to his beliefs.    Gum pockets and gum disease is mainly due to bacteria feeding on carbs. Also because modern mouths don't have Lost proper balances of healthy bacteria to compete with the harmful varieties.   One can totally avoid cavities and gum disease by dropping carbs.  That would also include the sugars found in milk.  Short of that, make sure you rinse your mouth with slight salt water after every time you eat, and floss every day.  Brush angle at 45 degrees with gentle motions to get under gums.  If you have pockets and accumulated tarter under gums, that tartar needs to be cleaned to a polished smooth surface and continual flossing and rinsing to keep plaque from accumulating and turning into tartar.
