YES!I agree this :Some people like jumping off the side of the cliff and others like to scale down back into the valley one foothold at a time with rests on ledges. Neither way is better, it's about fitting this thing to your needs and proclivities.
Searing meat tastes awful to me too. I don't like the contrast either. Only raw meat tastes any good to me at all. Liver is the hardest way to start if you ask me. The only way I can eat liver is if it's well-hidden.
Next time with that steak I suggest you get the sharpest knife you can and sharpen it again. Then slice off pieces of the raw steak (room temperature) as thin as you possibly can. It will be steak sashimi and changes the texture and taste. It will melt in your mouth if it's good meat. Much better than searing if you ask me.  I learn more from you ,thank you!
