curious.

in 6th grade we did an experiment, we placed garbage food items in a jar, stretched some balloon material over the opening, wrapped around the edge and sealed with a rubber band, and left the jars on the window sill.  this was to show that as food degraded, bacterial decomposition created gasses that would bubble up the balloon covering.  more of a visual demonstration than an experiment... 

perhaps there's not enough salt to kill off all of the bacteria, only what's on the surface?  fish and meats that are salted for preservation are usually heavily done, rubbing copious quantities into the meat, and allowing it to dry completely to remove all moisture.  i have the feeling this is not what you've done, so i think some bacteria is working in the jar.  maybe see what happens if the jar is left alone for a week or two...

if you close the lid indoors (a/c air temp 74-78), leave outside (85-95), then bring back inside to open, i would expect a small 'pop'...  the air in the jar has expanded?

they must think pretty highly of themselves to say we (humans) are the most clever...

we are lazy as a species, and devise ways to make life more accessable from an e-z chair.  this does not make us "clever".   

looking back at some of the knowledge ancient civilizations held regarding nature, mathematics, and astronomy, i'd say humans are the only species that has grown "more stupider".  with all of our superior intellect, we can't even figure out how the pyramids (both egyptian and south american) were built, or how they correlate to astronomical dates and events.  we lack the craftsmanship to do anything by hand, we've left it to the robot machine that was built...  because we grew lazy. 

we've lost touch with nature, and the healing medicines and herbs provided for us as a species, to cure all ailments.  instead, we pour ludicrous amounts of money into drug research as we try to devise our own methods in a lab... because we grew lazy. 

and we cook our foods, because we don't want to hunt and gather fresh, nutrient rich foods on a daily basis for our sustenance...  because we grew lazy. 

people can't field dress a fresh kill, or pick ripened fruits and berries from their living room chair, while simultaneously watching fox news and family guy marathons from different handheld electronic devices...  yup, you guessed it.

because we're lazy.     :)

i've eaten jellyfish, with sesame seasoned rice noodles.
jellyfish with anything is weird.

your common household freezer does not go that cold...  makes you wonder about all of the hoopla over freezing your foods.

things like fish, in order to be considered "sushi grade" (note: the fda has no standard for sushi grade) are flash frozen on the boat, to much colder temps than that...  this is what effectively kills the "bad stuff", and makes the fish generally safe for public consumption at your local "shady" sushi joint. 

does frozen meat taste different?  sure, just slightly.  is it as bad as what some people think?  i dunno...  but i don't always want some dried out, moldy hunk of high meat for dinner...  i opt to freeze most of what i buy, and eat it shortly after thawing.

I started eating it about two or three days after putting it in there. It started drying pretty quickly. I left it in there, spread out on a baking sheet, until I finished it all off, probably about a week or so.

mango, for dinner tonight, i tried raw ground beef for the first time...  thanks for the post (question), it had me thinking while i was standing at the glass butcher case yesterday...

i didn't leave it out on the counter for hours, but it was everything i expected it to be.  not too shabby.

Over the winter, I dried thinly sliced beef heart in the fridge that had been soaked in a brine at room temperature for several days. It was good stuff. A bit like jerky on the outside, tender on the inside, and great flavor.

that sounds good...    how long in the fridge?

Fasting causes rashes.
Fats melting releasing toxins to my blood.
Blood dumping toxins out my skin.
Rashes and eczema opened up.

Im doing detox protocols to keep up.
Colon cleanses.
Kidney cleanses.
Liver flushes.
Coffee enemas
Steam baths.
Foot baths.
Rebounder.

On day 10 of fast now.

My gut of fat is shrinking.

interesting, and i am sorry...  i've never experienced a detox rash while fasting.  if what you suggest is correct, do you feel the rashes and eczema symptoms will disappear once you've cleansed the toxins that create them?
have you tried to determine where the toxins have come from during your diet?

venison (deer) meat i think is considered more of a delicacy here...  it's a bit more expensive, and yes, very tasty (although i've never had it raw, it's been many years since i've had any).  older, more mature deer tends to be described as tough and "gamey / gamy" in flavor, i think to do with the more developed muscles and hormones of older deer?...  younger deer should be more tender and mild in flavor.

during the time my children were very young, i had told them that, "if you listen, you can hear the trees talking..."  we were spending much time out hiking, and communing with mother nature, they thought i was being crazy and silly.

a couple of years ago, my daughter said to me, "remember when you would tell us that the trees could talk?  i think i'm beginning to understand what you meant..."

i anticipate the day when i can reconnect with nature on a more meaningful level...  while my move to florida allows me to bask in, and appreciate her beauty and splendor, it has been difficult for me to return to the personal relationship we shared in previous years.  now, it's more like we "talk on the phone"...

your story is meaningful, and inspirational.  thanks for sharing.

this is a handy link (thanks, jessica!).  where ever your travels take you, this can be referenced to locate some good food...  i saved it into my "favorites", so i can always find it.

looks like most of the farms in ontario are about 3-6 hours from ottowa, this one in burnstown seemed to be close (about an hour away).  contacting some of the farms near ottowa, may lead to information on where the meats / foods are distributed close to you...

Elm Tree Farm started out raising a few animals for their own consumption, "so we knew what we were eating." We have now grown a bit, but you have to order early. Our Highland beef is low in cholesterol and very tender, and it has no hormones, antibiotics, or additives.

The beef is available in the fall, and occasionally in the summer. Lamb is available in the fall.

All the meat can be picked up at the farm.

until my transition into this better diet, i would perform an annual fast of 10-14 days, with only water.  i can't imagine doing a citrus fast, especially for that long...  very acidic?  lived life like normal, maybe just a little less aggressive with exercise.  i have done this for the better part of 10 years.  it takes some determination to perform, i would notice that i no longer felt hungry after day 3 or 4...  approx  64 - 96 ounces of water daily, this would typically lessen as time went by...  but ingested as my body desired.  i would fast in this manner because i felt my body wanted it, and it would continue until i felt "clean", then add another day or two.  the hardest part of a longer duration fast is working foods back into yourself once complete...  i would start off slowly with introducing bland, sometimes salty crackers (cuban goya crackers, or saltines), and slowly work light type foods back in... very slowly...  as my stomach allowed.  sometimes another week before eating somewhat normal again.  i completed a 10 day fast last year, just before switching my diet, in an effort to cleanse (my body felt it was needed, but only for that amount of time).  feeling the need to fast was my indication to start eating raw.  i haven't felt the same need since improving my diet.

the way i felt, physically and mentally, after completing the fasting period cannot be described.  it was awesome.  now i'm waiting for my body to tell me when, if ever again...  and if i do, i'm not sure what to do about crackers anymore, either.  i'll make that decision when the time comes.

i did an "accidental" fast of nearly a week last year around thanksgiving, not because i felt the need to, but because i ran out of food and money...  i think it's mentioned in my journal.

maybe to do with "set, and setting"...
(this typically applies to any drug use)

your mindset, ie:  you go to a bar for a single purpose (to get swilly with others).
your environment / setting, ie:  being in an atmosphere where others are enjoying their buzz, acts as a catalyst for your own buzz.

being in the right conditions for "set, and setting" can enhance the overall experience.  if one is off, the experience suffers...
