I take 600mg magnesium and 200mg potassium per day (NOW Magnesium and Potassium Aspartate).

Then I take a multi (NOW Adam), which contains a bunch of other minerals. No iron though.

I'm referring to dietary AGEs, as in AGEs that are already in the food that you put into your body, not the ones that are formed within the body.

Is there any research to show that they are unhealthy, as if they are somehow not metabolized and incorporated into living cells?

I'd say my breath has totally gotten a lot better after going paleo, and my teeth and tounge don't get that "dirty" feeling anymore.
