Complex carbs...carb crashes

Hi.

I've been eating a fair few carbs in the diet and find I get carb crashes from eating apples and berries and bad cravings for more carbs.

Do any of you do 'complex carbs' or slow digesting carbs? I'm contemplating whether this would be a good thing, for transition anyway.

The only raw ones I can think off the top of my head are plantain...bit more starchy than banana and eating raw tubers like carrot and beetroot, which doesn't appeal to me now.

I have the same problems with fruits : hypoglycaemia (among other symptoms).
No problem with complex carbs like potatoes or rice, but as I can't eat them raw, I just stay zerocarbs for the moment.

Plantain should be eaten overripe, and then they are full of simple carbs.
