Organic red wine?
« on: March 25, 2015, 10:20:43 am »
Is organic wine from the store pasteurized or heated in any form? I tried looking around on the internet but can't seem to find a clear answer since this is also organic. Also the name of the wines is Frey organic wines.

Some are raw and some are not. You'll have to ask the producer about the fermentation process. They might pasteurize or otherwise heat the grape juice before fermentation. I would lean towards thinking that if it's organic, it's probably raw, but it doesn't have to be.

In the past when I've had non-organic red wine that probably wasn't raw, I got a bit of acidity burn in the top of my stomach. Then I tried organic red wine that I thought was raw because of the long fermentation process, and it didn't happen. But I don't have wine often enough to be able to tell for sure.

I guess less than 5% of the wines are pasteurized, therefore more than 95% are raw. According to what I learned at the oenology school, pasteurization is only used to stop a wine to turn bad because of some unwanted bacteria. Another method to do the same is (was ?) sterile filtration.
Cause and effect are distant in time and space in complex systems, while at the same time there’s a tendency to look for causes near the events sought to be explained. Time delays in feedback in systems result in the condition where the long-run response of a system to an action is often different from its short-run response. — Ronald J. Ziegler

I called them and they said it wasn't heated in any form and only let the natural fermentation take its place.
