Studies claim nitrates are OK, if in leafy greens

Normally, nitrates are despised because they are so prominent in processed meats, but here are some claims that nitrates are OK. Though the author of the blog thinks that processed meats are still bad, but more because of advanced glycation end products, which are, of course, caused by cooking.
