Personally I like the front part as a human chew toy. I will chaw on the front muscle after I've peeled the skin, the flavor comes out as your saliva works on it.

Of course, only with top shelf grassfed, and preferably during green season because it seems like the tongue can have a cow taste to it sometimes in a big way, presumably due to it's constant contact with grass residues that are bound to be fermenting/digesting in the micro cracks and crevices inherent in the tongues design.

Eve you threw meat in the garbage??? The front of the tongue is so good as sushi, you just need to slice it thin and pound it a little just before you eat it. Good with some wasabi/mustard/relish, yummmmnesss.
