When to start freezing?

I want to try to order enough meat for a week and eat all of it before it needs to be frozen and repeat to avoid freezing at all costs. Generally, how long can you keep meat in the fridge both for fresh never-frozen meat or pre-frozen meat without needing to freeze it?

For a newbie, 2-3 days might be the most. For long-termers, up to 10 days might be fine. Anything more might lead to stinks.
