If I buy roots/tubers and they're in a packet, they'll say the macro-nutritional value raw. Would this increase with cooking?

Calories will decrease slightly unless its regular potatoes,
Protein fluctuates in slight range,
Fiber USUALLY goes lower,
For sweet potatoes the starch will lower, for white potatoes it will rise,
Sugars fluctuates...
It really depends on roots and tubers you can say for all of them, they have different starches and carb ratios.
I suggest download and install CRON-O-METER and you can check cooked against raw versions easy.
