Anyone try a raw zucchini noodle dish?

No but Zucchini/courgette are nice raw, I'd say give it a go.

i will let you know that when i lived on this crazy vegan raw food commune (yeah long time about...i worked in the garden and ate sashimi on the sly! come on!) the would make lasagna and spaghetti out of zucchini by slicing it that way or using a  "spirilizer" or whatever and then rubbing it with some salt and letting it ooze out its juices for a while, theres probably some crazy vegan recipe for it somewheres, but i am pretty sure it was that simple and actually good
