What raw meat is best/safest to eat? Beef/pork/lamb/etc...

So I am new to this raw food diet and just started to eat all raw meat yesterday. I bought all pastured fed meat, beef,pork and lamb, ate all 3 in once setting andthey all tasted amazing but I wasn't too keen on the lamb.

Now I really love raw pork but I see so much concern about it's safety and parasites and stuff, do you guys just stick to beef mostly? I was thinking of eating all 3 to get good variety but they all seem to be about the same (mineral,vitamin wise).

My question is, since the nutrition value is about the same, I take I could just stick to ground beef?

And one more thing, I have SEVERE digestive issues and food intolerances which is my reason for going raw, I found I couldn't eat cooked beef as it would make me feel seriously inflamed, so now I don't feel inflamed but my intestines and stomach feel heavy, I take there need to be an adaptation period?

Pigs are harder to feed right, they are omnivores (similarly to us). Cattle is much easier, as they are herbivores (just grasses, leaves, etc.). But if you eat only quality foods then it shouldn't be an issue. "Parasites" aren't exactly parasites, most have a beneficial effect as well (removing toxins from our bodies, some even produce some beneficial substances?).

There is an adaptation period. It varies in symptoms and lengths from person to person. Stomach acid has to adapt, so does gut bacteria. There are detoxes your body will go through and damage that has to heal. Replacing weak molecules(?) Etc.
First time I tried raw beef fat I didn't shit for about 3 days, though after that it normalized. Was simply adapting to raw fat. As well had this light burning sensation in my stomach in the first months, now it's gone.

Different cuts from the same animal taste different, as taste different individual animals.

From animals I eat beef meat, fat, and some liver, mainly. No pork anything.
Even if something is claimed to be pasture raised, especially pigs and other animals with similar diets, it's best to do some research first (even go check the conditions the animals live in and what they are fed). Because some people do lie, and do claim this and that in total ignorance.

I have eaten raw pork for the past two years with no ill effects or parasites.  I was definitely very paranoid of it for 3 years before I giving it a try.   I was never a fan of it when I'd eat it cooked, but that was when I was growing up and I had no control over the source, so it was CAFO meats that were gross.   

My current source is a local pasture/forage fed farm that I trust.  To me, the most important factor in choosing any meat is the animals environment and diet.  I seek out farmers who are raising animals on the most appropriate diets and in the best environments. 

That said, I have raised my own pigs who had wormy livers so I keep my consumption of pork to muscle meats because am not able to inspect the animal and its organs at slaughter/butcher. 

 I absolutely love fatty cuts though, especially pork belly.  I think pork fat is the best tasting, never chalky, melts in the mouth and is very satisfying. 

I had read a while ago that the fat from pastured pork who spend time in the sun is a good source of vitamin D. 

I think  your palate will change the longer you stick to eating raw meats.  I know when I first started I was not a fan of larger cuts and stuck with ground everything, muscle meats, organs, from all types of animals too, raw beef, bison, poultry, yak, elk.....all ground.  Once I realized that dry aging meat was the best way to store larger cuts and that it not only improved its flavor but also made it much more digestible, I was a convert.  Ground meats are the least appetizing to me now.

Also quality of food, season, region, breed, etc...all change the flavor and nutrient content of different meats.

The toxins/antinutrients in foods are well known and often discussed. What's much less known are the anti-toxins, such as butyrate and vitamin B6.
