what I still do not understand

Instinctive eating says do not eat denatured foods.. i can only purchase certain foods from locally grown sources.  So should i limit myself and only buy these foods or get stuff from the grocery store also in order to expand my options.

AND... should I be rinsing my fruit and veggies off under the tap water??? its all I have access to at the moment!

I'm not suggesting buying everything that a grocery store sells, but what's the problem? Local foods can have the same benefits or the same problems as foods that arrive by truck, but both can be eaten instinctively. Just avoid denatured foods, which would be anything canned, many frozen items are boiled or steamed first, food from the cooked section (obviously). It's pretty easy to tell which foods are uncooked and which are cooked.

Rinse or not - some people do and some people don't. Perhaps you can decide what you might be removing by rinsing, and if you think there is something to remove, then remove it.
