I made jerky this week, although I used a dehydrator I have like Satya left over from more vegetarian times. I should have cut it thinner but other than that it's very good and interesting.

Dried meat would be nice for traveling long distances with no quality fresh raw meat around.

Thanks for posting this, I think it is very useful. I've actually had a huge desire for jerky as of late [real jerky] even though I was never big on jerky in the past. SO I think I'll get down on this sometime soon. is there any way to make jerky in a small oven that can heat at very low temps?

Lex, or anyone else that has used this method:

Where does one keep the box during drying? I was thinking about keeping it on my porch but now that it is sunny I don't know if some sunlight hitting the top will be bad. The temp also gets higher than the interior of the house of course, but def not more then 80 max or so this time of year I imagine, and is usually no more then 70 or so.

does it smell any more than leaving meat out for a few hrs (smell like cooking?)

does it work better to fill the box?

also, I just perused the pemmican manual before, But I believe I read that you should use the same kind of fat per the dried lean, does that mean you can't mix certain kinds of lean (say organs and muscle meat) in a single batch of pemmican, or more importantly, can one can't use pig suet with dried cow meat? I have a hard time getting grass-fed suet, but access to cheap pastured pork suet.

also does one need a grinder or can you just crush into small pieces?
