What beef cuts are most tender?

I finally found a place that can sell me organic grass fed beef and chicken with a variety of muscle meats. But I don't know which beef muscle meats are most tender raw?

The tenderloin and fillet

Don't go for the most tender cuts.
-You're eating it raw; cooking toughens up meat so "tender" is relative in a raw diet.
-Tender cuts are expensive compared to tougher cuts.
-Tender cuts tend to have less fat to them.

It's your call but you can save a lot of money without noticeably sacrificing anything by buying the cheap cuts like chuck or brisket.

In our markets it is called sirloin -- the latter part -- "madera".
Also T-bone, which is usually fatty.
Removing the t-bone they call it strip-loin.

I buy these tender cuts because the difference in price is small in my markets.

Usually 290 to 300 per kilo for sirloin

vs. brisket cuts at 260 per kilo.
