How to store Beef Mince
« on: January 02, 2011, 07:12:27 am »
Im buying beef mince lets say in the morning, how do I store it for the evening?
If I freeze it and let it be on the table 30Minutes before eating it is it fine??

I know how to store steaks or atleast I think I do by putting it on a plate dont covert it with anything and just put it in the refrigirator
and switch sides every hour its gona give it good bacteria right? and if I cover it its gona have bad bacteria.

What about ground beef / Mince Beef? how Do I store it?

Sorry for very basic questions Im still newbie.   :'(

Edit:
I also read ground / mince beef digestion time is longer than regular meat? is that right? I could use some information  -\

I've not eaten raw beef mince, but if you are freezing it you are in my opinion best off eating it straight out of the freezer.

Why not? It has anything to do with bacetria/parasites?
I remember you mentioned that it was your first raw meat meal I am not sure

Do you guys think ground beef is not a good idea?

Maybe I can put it on a plate and into the refrigerator without covering it the same like with steaks?

I usually buy meat once a week and store it covered in the fridge.
Then each morning I take it out and leave it lightly covered on the table until dinner.
There is no fear of bacteria for me anymore,
I have eaten some stinky slimy stuff with no problems, on the contrary I feel better when it is aged.

Cold meat is not something I would choose to eat. Room temp tastes and feels much better.

I do not eat ground beef, I like to know which cut I am receiving.
IMO... Go for the stew meat, roasts, marrow, or organs.

Only ground beef bought with the intention of eating raw was either laced with chemicals, or rotten upon reception so it doesn't really count.

Lexicon and Katelyn eat raw beef mince afaik so you could ask them.

For the steaks, I would not flip it every hour as that is quite time consuming. Every 12 hours is best, 24 hours is ok too.

Ideally you should get meat hooks so you don't ever have to flip it.

I would store ground beef in a sealed plastic bag with all the air sucked out if I was going to eat it that evening. That's because it's surface area is more exposed than a steak, so it will oxidize faster.

I've eaten it for over 4 years no problems. I dry age it now. Crunchy and tasty.

Phil actually recommended to take meat out of plastic bags asap...I now store ground beef on paper towels in the fridge. without any packaging. Works well so far.
I have almost only been eating minced meat btw.
