oily fat vs brittle dry fat

I just got some lamb fat which is particularly oily. What does this mean? Which do you prefer?

its oily right out of the fridge though. maybe it was sitting out of the fridge at the butchers too long?

There are several discussions about fat and the different types.

There exist two main types of fat: Fat below the skin and the fat that forms around the organs. One is typically oily while the other is dry and dense. The differences between fat (from what I understand) is a different profile of saturated fats (poly-,mono-, and un-).

i typed types of fat into search and didnt find any answers. I didnt come across the page you linked to which had good info on it so thank you.

Could it be that the oily type of fat is saturated fat? It seems pretty saturated to me but I dont know.
