"Organic" is just a label. I've come across farmers, too poor to afford to convert to organic status, who provided food that was far superior to what large agricombine organic producers had. What matters is what the farmers feed their animals on, and what conditions the animals live in. "Organic" is meaningless, for example, if cows are fed on 100% grain diets and/or only allowed to stay in a stall for 24 hours a day.
