Jerky "Protein Bars"
« on: July 13, 2011, 02:19:43 pm »

This is about a half pound of grass-fed ground beef(trader joe's brand), mixed with fresh chopped garlic, Himalayan pink salt, paprika, and a little basil and oregano, shaped into bars and sprinkled with more paprika because I love it, then dehydrated at about 90 - 110 degrees F so that they're still raw.. but acceptable to eat in public.   ;D

They weren't dehydrated for long, so they're still a little soft, but they'd be darker and chewier if I had dehydrated them longer.  I also made jerky sticks like slim jims before, but didn't get to take a picture before I ate them all.  They took a very long time to roll into sticks though, so this time I just made bars.

Hi, I'm 32, around 5'4" and ~124lb, no real significant health problems other than hyperventilating when running/exercising (that my doc said was because of the smog/asthma), fatigue, and really bad acne.
I'd preferably be a carnivore/very low carb, but I have had a very hard time finding grass-fed or even organic fats, organs, and marrow. I consume raw dairy, but I do not eat much vegetables.. however, I do love fruit.
I live with my dad, so I also have to sneak any raw meat eating.

These looks delicious, Wolf!

I do not care what people think about my food anymore, I just eat everything I like, just like others do. ;)
But if you care about it, these must be great! I bet they are tasty too, a great intoduction to raw animal food-world.

Neat idea.
I'm wondering if we can stock a lot of this for survival food.

I would not do that GS.
I have read somewhere that preserving meat with salt is not a good idea, especially when you eat that only. The people who traveled with caravans knew this, they never salted their meat, they said it will make you sick. Neither did the American Indians.
I would do pemmican! Pemmican mixed with dried wild berries perhaps, and dried wild edibles? Or separate dried meat and berries etc.

Can you not make jerky without salt?

I only added salt for taste.  You can make these with meat-only if you want.  As long as it is not cooked, meat won't go bad, only become high, won't it?  I don't know about if it has had salt added or not though, but I only added the salt for taste, and it is raw himalayan pink salt.

I also didn't make these to store for a long time.  I only made them because I don't like the taste of the ground grass-fed beef anymore, only the grass-fed steaks, but the only store I can find grass-fed steaks from has been out of stock for a while.. So I was looking for an alternative to still be able to eat grass-fed meat everyday.

If I was going to do it for storing meat, I probably wouldn't have added any spices or salt, because I wouldn't know how the spices and salt would react sitting around for long periods of time mixed with the meat.  But I have thought I might possibly turn some of the grass-fed steaks, when I get them, into jerky for storage, because I also don't like it so much after it has become high, and would rather still be able to eat it even as dry dehydrated jerky.  However, I also don't know how much nutritional damage that dehydrating does..

Thank you.. I still crave foods from my SAD days, so I have been looking for ways to make something similar yet still raw and healthy.. so I make raw flavoured jerky, raw ice cream, raw chocolate syrup.. not the best things to eat, but certainly not the worst, as the regular stuff you buy from the store is much much worse.

Oh, I love jerky! I make jerky every weekend. I normally make different kinds, so I can enjoy different tastes. I found an amazing book at amazon, Jerky Bible. Those recipes are all natural.
Jerky Bible
http://www.amazon.com/Jerky-Bible-ebook/dp/B007JFSDH6/ref=sr_1_1?s=digital-text&ie=UTF8&qid=1332383517&sr=1-1 I've tried some of them and was amazed. I can't eat raw meat, but I love jerky. Salmon jerky was great. But hamburger jerky was the best! Especially Greek Bifteki Style Ground Beef Jerky. Brazilian Churrasco Style Jerky was good too.

I've kind of started to live off beef jerky.  The grass-fed steaks are very expensive at $15 a pound, and I can only buy food once a week, and it's very hard for me to sneak eating raw meat so I can't even eat it everyday, and then they go bad sitting in their plastic package for a week, and I hate the taste of them after they've  been sitting in plastic for too long, and it's a big waste of  money to have to throw away a pound or two of meat every week.

So I buy the 100% grass-fed ground beef from trader joes, shape it into strips, and no longer add any salt or seasonings--just straight meat, and dehydrate it all.. then it's a lot easier to eat anytime, even at work, which is when i need food the most because working around a bunch of good-smelling pizza all day while hungry is not a good idea..

I like the taste of it without seasonings now, though i still can't eat it raw.  The only problem is that my dehydrator gets over 160 degrees F and I threw away the box I had jimmy-rigged to get the temperature lower because of threats from my dad that he was going to clean out my room because of all the funny smells.. he doesn't like the smell of the meat when I'm dehydrating it, but I don't know how to keep the smell contained more.  He knows i make jerky now though, but now i can't get the temperature under 160 degrees, maybe I should rig another box or something..

@ Wolf

Reading about how you have to hide your raw meat eating from your family really moved me. I've realized before how fortunate I am that my family accepts my crazy dietary experiments (e.g. high fruit diet, then now RPD) but reading about your experience just made it more real.

So you have to secretly dehydrate all your raw meat in your own room? Then where do you store it? in your cupboard?

I hope that one day you can proudly show your dad this perfectly healthy, ancestral way of eating. Best wishes.
Wishing everyone the best in health and happiness! much love to all!
