Vegetable Peels- eat or not?

Do you eat the peel of say red beet?

I remember that conventional wisdom says that the 'skin'/peel of vegetables and fruit contains a lot of nutrients (or directly beneath it) and therefore one should eat it.
Intuitively though I prefer not to.

And what about tubers like sweet potatoes?
Do you eat them at all? With or without peel?
And if so how do you prepare them raw?

I eat them quite often. Sometimes without peeling, sometimes peeling them. Nothing to prepare, I just eat them... with my mouth  :)
I peel tangerines, bananas, mangoes, papayas, pineapples. Sometimes I eat cherimoyas with their skin, but I often peel them. I don't peel apples, pears, strawberries, grapes, arbutus, blackberries, blueberries...  ;D

I've never liked red beets.
There's no rule. If you like oranges' skin, then eat it!  ;)

From my understanding, the skins generally have concentrated amounts of both nutrients and anti-nutrients. I personally don't care for tubers raw, so I have just stopped eating them altogether. I don't think I've ever had a fresh beat - just canned ones as a kid from my mom. I'm probably not a good help because I really don't eat vegetables at all. I barely find any appealing, and I don't care to make myself eat unappealing foods if I don't have to.

Those are fruits. :p If we're talking about fruit, then I peel banana, mango, pineapple, avocado, and oranges. I would also not eat the rind/husk of melon or coconut, though as a kid I felt cool when I'd try eating a watermelon rind. I don't peel apples, pears, berries, or kiwi.

There's no rule. If you like oranges' skin, then eat it!  ;)

Agreed! I would always get weird looks as a kid eating the kiwi fur in the product section. But I liked it!

I quite like the crunchiness of  red beets. But it's always a bit of a mess to cut them (and peel them).
I got interested in them because I had read of a traditional recipe where juice it made from red beet and that should over time dissolve gall stones, which I have.

The peel is an interesting topic in that in general indigenous people don't waste anything unless it's not good for you. So one could probably learn from them whether to eat the skin or not. But I haven't found any info on the way they do it.

They probably eat the skin when it's tasty and reject it when it has a bad taste.
