White meat/Red meat conundrum

In the media, white meat refers to fish  and fowl, with pork considered to be inbetween white meat and red meat.Yet, while I agree that intensively-farmed pork and fowl are indeed quite white in colour, I can't help noticing, though, that raw wild boar meat is dark red in colour as is the raw wild mallard duck I buy. Similiarly, farmed salmon has to have an artificial pink dye added to make it look like the more genuine pinkish colour that wildcaught salmon have.

i saw a program recently about pork farming/ breeding, appearently years ago when red meat was beginning to be vilified in the media pork farmers began to selectively breed the "red" out furiously....giving us "the other white meat". in this same program anyone who was to come in contact with the pigs had to fully suit up in surgical scrubs and mask because the pigs had virtually no immune system.must have bred that out too. l)

That is just revolting. Yet another reason to avoid grainfed pork.

how does wild boar meat taste?  where do you get it?

how does wild boar meat taste?  where do you get it?

I get hold of wild boar meat either from farmers who hunt wild boar or from farmers who raise domesticated wild boar - I get both from local farmers' markets(farmers are the 1 profession which has the time and the opprtunity to hunt frequently, so they are my main source of wild game). The domesticated wild boar meat I get is probably not ideal, likely being grain-fed, but despite that, the taste is way better than domestic pigs.

Difficult to say how wild boar tastes. All wild meats tend to have a very gamey flavour which some say is due to the presence of the increased amount of omega-3 fatty acids present in it. Wild boar meat is no exception. grainfed pork itself is very bland, tastewise, so you'll be amazed at the pleasant taste of wild boar.
