how to store meat

what do you think about storing meat in plastic bags or keeping it wrapped in the typical white waxy paper? If I keep it in wax paper some of the paper usually sticks to the meat after some days and it's hard to get off. I'm not so sure about plastic bags since I have a few times received my meat in bags which smelled strongly of plastic and it affected the taste of the meat ... that can't be good.

I think storing meat in some kind of glass container or in enameled bowls is best but it's tough when you have something like an entire leg of lamb.

Advice?

I personally don't mind vacuum-packed meat in plastic. Using glass is so expensive re storage of food.

I use Ball jars with the metal lids. You can get those pretty cheap. I keep ground meat in those for weeks in the fridge. The taste only gets better. I'm kinda paranoid about plastic. I thaw my meat in plastic (from Slanker's) but I transfer it to the glass jars as soon as it's thawed.

I'm about to place a big order with a meat supplier who is also supplying my fat, and the meat comes in 1lb vaccum sealed bags.

I typically eat about 1-1.25 pounds of meat per day. How long, if they are in the fridge, will it take for them to develop that anaerobic bacteria that is so bad?

I'm confused on how to store this stuff. They're going to send me about 3 weeks of meat at a time. How long will this stuff keep in the fridge?
