I recall a member previously assuring me that prosciutto crudo from Italy was fine. But, here in Austria, it is almost always full of listed preservatives, with only one exception which has salt added. Point is one has to be extremely vigilant if one is making even a tiny, seemingly simple compromise.

Even vacuum packed tuna and swordfish fillets contain a least 4 additives. It's written on the sticker of the whole pack, sometimes visible on fish stalls. I tried to take of photo of it but it wasn't clear enough to be readable. I'll try again when I get the opportunity.
