I found a sushi market!

so i found a pretty cool korean sushi market when i was just wondering around town. they had all kinds of frozen 'sushi grade' stuff. was just curious about some of their items being raw or not. if anyone has some experience with sushi maybe they could help me out:

the items in question: salmon and flying fish roe, octopus, abalone, hamagari (some type of clam?), squid

the octopus and hamagari looked a little purplish which makes me think they were cooked... pretty sure the roe and abalone were raw. i dont know, any help? oh, also they had frozen wild caught octopus that was definitely raw... should i give that a go?

Try it all. Squid when served as sushi is usually cooked but I bought some raw and it was a darkish grey and had a very fishy smell.

A lot of sushi isn't raw at all, let alone the cooked rice part. One can usually tell from the taste/texture/appearance. Anything slimy and pale in colour is more likely to be raw etc(shellfish and octopus/squid are almost never raw, just the fish).Better to order a sashimi dish which is just pure raw fish, and guaranteed to be raw(just avoid the farmed salmon).

I've eaten a lot of sushi in my life, i found the best thing to do (since i am usually pretty shy about asking questions ) is i hit up the local library cooking section and found a sushi cook book. I lived in Japan while growing up and have tried just about everythig. it can sometimes be easier to try it with the rice first to ease into the flavor, or sashimi platters are great too. The cook book is nice because some of them tell you about what kinds of fish go well to gether and other sashimi sauces.

I buy wild caught fish at the store and slice that up as well. Room temperature always makes it taste better. Even now though I stay away from lake caught fish.
