Favorite organs?

just for shits and giggles i thought it'd be cool to start a thread listing your favorite organs that you've had. it might also help newbies figure out which organs to try first too. i'll go first with my list from best to worst:

beef marrow
elk heart
goat brain
lamb marrow
wild hog marrow
lamb liver
beef tongue
lamb tongue
beef pancreas
bison heart
deer marrow
deer heart
beef heart
goat heart
lamb heart
chicken marrow
bison kidney
lamb kidney
bison liver
chicken heart
goat testicles
beef adrenals
chicken liver
wild hog adrenals
beef liver
lamb testicles (uh... pungent)

anyways, hope this is helpful/interesting to someone. feel free to add your own list. i'd be very interested.

It's funny how some people prefer the taste of beef kidneys to beef liver.last time I ate kidneys it tasted like pure urine mixed with some type of acid to me.liver is a delicacy in some countries,so I am guessing that most people prefer the taste of liver rather than kidneys.

I absolutely love raw tongue and the right kind of raw marrow. Other organ-meats are fine but I'm not particularly excited about them like the other two. I try to avoid raw liver except very occasionally, not because of the taste which I like, but because it gives me ghastly very loose stools, difficult to wipe.

All the lamb organ-meats - tongues, hearts, liver, kidneys, spleens, testicles and brain - each one has its particular taste and flavour
What I like the most is the variety. :)

Regarding the stools, one suggestion is to squat on the toilet. ie. put your feet on the rim and bend down. This puts your bowels in the proper position to excrete and will result in a better stool with less mess. Urinating is a different thing altogether as in this position you will pee on the floor if you are a guy.

Remove shoes first. This from an unpleasant memory of Mexican toilets.

i've never had them. i would try them if i could get them though. the halal meat market where i got the goat brain had a bunch of unlabeled organs in the freezer. next time i go im going to ask what they are and probably get a few of them. i saw something that was definitely either lung or tripe...

i've heard tripe is sometimes bleached before selling it. does anyone know what a bleached and unbleached tripe should look like?
