Right out of the fridge?

Do you guys eat meat right out of the fridge or do you let it sit out for while? Is it dangerous to do that? Also what is "high" meat and what is the point of eating it vs just raw meat out of the fridge?

Beef.
I like right out of the fridge.
I think when I hit 1.5 years on RPD I suddenly liked it from right out the fridge.
Before that I let it sit for a while.

Of course I like super duper fresh in the wet market just been killed.
They are 2 separate deliciousness experiences.

Sashimi is nicer when it's cold.  Of course straight out from the sea / fisherman is best.

Eggs I like them at room temperature.  But cool eggs are refreshing too. (we refrigerate our duck eggs if there's too much of it that we cannot finish in 1 week)
