That was my dinner tonight.
A little from all what was in my meat-order.  ;)



Beef fat, the strips are beefheart, the cubes meat  ;) and in the mid are some marrow. All from grass fed beef.
The beef fat tasted the best..mm.m.

You can use some Shoyu if you like of course.

Looks delicious! What would I ask for from my butcher if I wanted that kind of fat? Is it kidney?

It's more of a fat cap from a cut like brisket. If you're going to a butcher ask to see his fattiest cut of brisket and you'll probably find something similar on it.

Wow!  The simplicity, presentation and artistic photography of your inventive paleo menus, Inger, is absolutely beautiful.  You really should consider opening that raw paleo restaurant as others mentioned previously.  It would be the final persuasion I'd need to relocate to Germany!  :)
