how do u guys store ur meat in the fridge..

my meat comes wrapped in plastic... should i open and leave it open in a glass container in the fridge? or is it better sealed?

i put my meat on a cookie rack in the fridge, the longer i leave it like that the better it tastes.  but i'm interested in the responses here!!  some people hang it, i'm not sure how that works?

so you basically dont seal it? what about moisture?

right, not sealed at all, just stick it on top of a rack. the outer edges start to dry out a little, but i like that too. 

i leave as much as i can fit in the fridge on racks and just eat it when i get to it. the longest i've left anything in there is about a month, and it was the best tasting ever!

i think you can put it in glass though too.  and if you're up for making high meat (i haven't tried this yet), i think some people just cover a glass jar in the fridge. just takes longer in the fridge.

I seal it in a solid plastic container so that it has its own oxygen but does not stink the room out. I have had SAD-eating acquaintances repulsed re smelling high-meat so I have to be careful.
