Reallllly? That's super weird!! I've never heard of that before. At most, you see organs for about 4$/lb around here, but typically I pay 2$ or less, same with suet. Whereas grassfed muscle meat starts at $5/lb, and every other cut get's more expensive from there, with the highest being usually about $23/lb which I think is tenderloin and the other more tender cuts.
Have you looked elsewhere for better prices? Are you connected with the WAPF out there? They could probably help you locate less costly sources unless that is just a New York thing because of your population density out there??
Can you hunt on your land? Like are you in the suburbs or isolated in the country? If you can, take your own game on your property in order to get organs. As long as you're smart about it you don't need to worry about laws, just don't take more than you need.
