Does raw fat taste bad after 2-3 days?

Just a question....

When fats from beef is just a day old- it taste good but say on the second day or third day the taste of it is bad such that it's hard to eat it.

Any ideas how to properly store raw fats from animals?

Or it's just the ways it is.

The live back fat degrades in my refrigerator as well.
I believe it's a matter of getting used to.
I'd say I can tolerate that nice fat taste up to 1 week in the refrigerator.
After that I'd rather buy new fat.

I experimented and found that if I put the fat in the freezer, it thaws out tasting good again.

I just learned to buy fresh raw beef every week or more frequently in smaller amounts.

Mine has been in the fridge close to a month now. It's dark red. Very dark. I can still see the fats. Gonna eat it for dinner tonight with a couple of raw eggs.
