yellow bone marrow
« on: October 27, 2010, 12:27:07 am »
I purchased some bone marrow today. Some of it is extremely bright yellow and liquidy. Is this alright to eat? Have you guys seen bone marrow this colour before? I've put normal bone marrow on the right to compare. I hope it's not from a sick animal. I've posted some pictures...
Thanks

This is the marrow I get too sometimes. Yellow and creamy. It's delicious and of course it's OK to eat it.

I know this is a late post but I wanted to let you know I heard yellow marrow is a sign of vitamin A which is awesome. The yellow makes it look delicious. Like my instincts just from color make it mouth watering because im instinctively picking up on the nutritional value or something.

From which animal came this bone marrow? Was it beef?

I have never seen such a yellow bone marrow from beef so far. I would try to find out more about the source. Very yellow color CAN be a sign of disease as farmers and butchers told me many times.

I see one piece of very yellow bone marrow (color of bananas) occasionally, maybe 1 in ~30 pieces of raw marrow. It didn't taste any different than normal marrow, so I wasn't afraid to eat it.

"At birth, all bone marrow in children is red. With age, more and more of it is converted to the yellow type."

from article about human bone marrow, but I assume this would also apply to other mammals such as beef.  From http://www.newworldencyclopedia.org/entry/Bone_marrow

I Googled "Yellow bone marrow disease" without quotes and didn't find anything about yellow bone marrow linked to disease.
Wishing everyone the best in health and happiness! much love to all!
