bison vs beef - omega 3 ratio
« on: February 14, 2011, 02:58:27 pm »
As far as I can tell 100% grass-fed http://www.google.com/search?q=omega+3+to+6+ratio+bison&ie=utf-8&oe=utf-8&aq=t&rls=org.mozilla:en-US:official&client=firefox-a bison seems to have a 4:1 omega6:3 ratio while beef has 2:1 & lamb has 2:1 or better. I find this surprising since pretty much everywhere you go people say 1:1 or 2:1 is what man evolved on as paleo and bison would be the most paleo out of all those three animals no?

Would you still eat bison rather then beef?

Grass fed bison is absolutely perfect!

As far as I know even the ratio of 4:1 is very good. Anyway, don't worry about such theories. As long as your meat comes from wild or grass fed animals everything is fine.

It can vary greatly from bison to bison, don't worry as long as its grass fed you will be fine.

I need some advice. I started out getting fresh 100% grass-fed beef liver, heart, kidney, & suet from a butcher. I asked them about getting other stuff like brains, blood, tongue, etc. and they told me to order it from the slaughterhouse, which I did for a month or two.
Now I'm being told that there's a new inspector and I can't get that other stuff anymore. I spoke to the inspector and he told me he'd have to check with his boss, which he said he did and his boss said they can only sell me the basic liver, heart, kidney stuff. I asked if there was a reason and he said his boss didn't say and he didn't want to bug his boss about it again because he's worried about keeping his job. I mentioned brains in particular and he said it was fine with him but the slaugherhouse owner/manager didn't want to bother with that stuff anymore...

The only other meat source I've found that's somewhat nearby is this http://www.arizonabuffalocompany.com/articles.htm
but they say "Bison, as do cattle, require the occasional immunizations for the juveniles."
so they are injecting their bison with vaccines....
do you think it's even a good idea to see if I can get blood, brains, tongue from them? Is liver, kidney, heart, chicken, few eggs, coconut butter, avocado, and suet enough?

I really want blood & brains... blood is really refreshing and energy boosting, and brains are such a good source of cheap omega3 fats.

It's a shame... I am sure the slaughterhouse is more than happy to provide those organs, they just want happy customers.  Keep on calling and talking to the inspector, or find out who his boss is and talk to him/her.

OK,
I called my local inspection agency(http://www.azda.gov/asd/mpi.htm) and actually talked to the inspector that was at that exact place when I was getting blood before, and he confirmed that it's ok but I just have to give them plastic container's to put the blood in unfortunately, because they said they can't have glass there in case it breaks and gets into the other parts of the animal. So now I just have to call the slaughter house tomorrow and tell em it's been ok'd again.

He also said I can get pretty much anything except some parts of the animal - like certain glands - which are not considered food by the federal government. The only way to get these is if you give them a letter saying you need it for a school project or something. Or if you bring your own animal in, or maybe if you find a farmer that'll do something like that.
I'm going to look up the federal government guidelines/specifications and see if I can submit a complaint or something about them not considering the whole animal as food... and maybe you guys can also do this since the more complaints they get, the more likely they are to do something. I'll post the federal government stuff here as soon as I find it.

By law, you should be able to get everything but the brain. And not being able to get the brain is unconstitutional, so even that could be challenged, if you want to get a lawyer. I would contribute to your legal fund if that actually went to trial.

If you add some seafood I would say there shouldn't be any shortage of any nutrient...

I should know this by now but we can't survive off of whole animals alone? Even after growing up on many types of plant food it seems like it would be foreign to choose to eat plants in the wild(when seafood not available)... of course with fruits being the exceptions, but everyone says modern fruits were non existent in those days.

By law, you should be able to get everything but the brain.
Where did you learn this? I'm having trouble finding the federal government guidelines/rules for meat inspection. But this page mentions BSE prevention http://www.azda.gov/Main/administrative_rules__laws.htm
"they prevent cattle that cannot walk or rise from being slaughtered for use as human food. Two, they prevent specified risk materials from cattle over 30 months old, including the brain, skull, eyes, trigeminal ganglia, spinal cord, certain parts of the vertebral column, and dorsal root ganglia, and the tonsils and distal ileum from all cattle from being used in the human food supply. "
I'm pretty sure I/you can still get brains from cattle under 30 months old. Neither of the inspectors I've talked to so far have said I can't get brain.
Seems like it would be on this page/site http://www.fsis.usda.gov/regulations_&_policies/Federal_Meat_Inspection_Act/index.asp but I can't find anywhere that it talks about specific parts of the animal. So I called the same inspector again and he told me only certain things like the penis and certain glands are not allowed to be sold for food, and he also confirmed the 30month brain thing. He said the gal bladder & lungs are not allowed but the spleen is allowed. He said a lot of it is up the establishment on whether or not they wanna give you something, and you can get somethings if you tell em it's not for food(human consumption)...
I told him I wanted to read this somewhere and he said it's in $400 books that might not even be available to the public, but that I might be able to find it on the usda fsis site(linked above) or somewhere else, and to search for 9cfr and the parts about this stuff might be in the 300's.

I did a quick google search for 9cfr and there are a few sites like this http://ecfr.gpoaccess.gov/cgi/t/text/text-idx?sid=900ea0ccb72010a4fb5a401f3d42f82c&c=ecfr&tpl=/ecfrbrowse/Title09/9cfrv2_02.tpl that seem to have everything. I don't have the time to go through it all right now, but I'll try to find exactly where it talks about the stuff we can or can't have as soon as I can.

I'm also curious to know exactly what organs/parts of the animal are worth trying to get. Like what their nutritional/health benefits are. Anyone know if there's already a thread about that(not sure what keywords to use to find that)?

The brains and spinal column bacame taboo by gov decree about a decade back when mad cow disease was in the news. They found it could be transmitted to humans. In Europe they were incinerating all the cow herds.

The problem stems from the practice (at that time) of grinding up butchering waste and feeding it back to the animals. I think that this is now outlawed or regulated. All grass fed should not be a problem. If you can find a butcher who is not federally inspected (if there are any) you can get the brains and anything else you want. Or butcher animals yourself.

My fed inspected country butcher will not sell brains/spinal retail, but on Saturdays ranchers bring in goats, sheep, & old cows that I can buy on the hoof, the butcher will butcher them for a fee and I can take home whatever I want. Certain ethnic groups prefer this and travel long distances for the service, Halal or something.

For a while I could buy frozen pork brains in the ethnic section of the supermarket. I'm sure they were factory pork brains but I bought them anyway as they were my only option. Then they quit selling them a couple months ago. Warm brains made me feel great.

Why not? It should be possible, IMO. Maybe Lex Rooker is showing us exactly this...
