What do yo do with fish with visible parasites?
« on: February 18, 2011, 04:17:48 am »
So if you are chopping or chomping into a nice piece of raw fish, and you see some wiggly critters aka parasites, what do you do? Stop eating and discard it? Or continue eating the fish along with the parasites?

I would probably soak the fish in vinegar or brine to kill the parasites before eating.  Otherwise I'd compost the fish.

I'm guessing this is a hypothetical situation?

But I'd toss it for sure.

Usually most parasites are hidden so the ones you'd see would make it lucky for you. Msot fish do have parasites though, they are technically bottomfeeders and come into contact with poop, flies, larva, eggs, etc with the water they take in, and eat other animals along the food chain picking up parasites too. So...? Do we still discard even though most fish may have hidden wrigglies or what?

Tapeworms are actually almost always harmless, according to reports. But, anyway, getting rid of parasites just requires one to get a prescription from a doctor so you can get an anti-parasite drug. More to the point, RVAFers very, very rarely encounter parasites, if ever.

It's because in the water fish come into contact with fecal matter, parasites, eggs, cysts, larva, and eat other animals with parasites in them or get them along the food chain. So yeah I guess that's why. I guess i'd discard it. But i'm still out on the book, i'd like to see where this discussion would go from people's experiences.

I've never gotten fish like that, but I might just freeze it for a long time. Freezing kills animal parasites, not bacteria though. I think a freezing of about 2 weeks should kill just about anything.

Or you could cook it, which I don't consider as big of a deal as some others. Or the acid kill might work too, citrus juice or vinegar soaking.

If it grosses me out and my gut instincts say YUCK, I throw it out.

But this has never happened to me with fish.

I've done this with fruits.

Trichinella in wild boar meat are very resistant to freezing.

Have you met my friend, GARLIC?   8)

These concerns really do not frighten me.
I would be shocked if we were not eating parasites on a daily basis from cooked or raw healthy animals.
Once I did an experiment with cooked beef kidney,
I put it in a jar where no flies could get to it and worms grew within.
Cooking probably does not kill everything, as many would assume.

How thoroughly did you cook it? Also yuli (i believe it was her) once mentioned purposely eating a piece of fish with a huge parasite problem. She had a stomach ache for an hour and then the next day saw the worms get excreted.

There are various types of herbs that are eaten by wild animals. They intuitively know how to combat the hostile parasites.
Why should do the same.

Yes Yuli said that a while ago.
I was comparing to raw so I cooked thoroughly, almost completely dry. It went from package to fryer to jar.
The cooked meat developed some slime and a bunch of worms. Even if they were maggots they would have had to survive the high heat on a frying pan. Revealing that cooking does not kill all life forms. It even allowed these to thrive.

Exactly. Sometimes I crave garlic, ginger, cilantro... Sometimes I am repulsed by it.

These fish parasites are specific to fish. Most fish have them. They require an aquatic environment and fish flesh to survive.

You are not a fish and you do not live in the water. We are mammals. We have our own parasites.

Be cautious eating raw mammal flesh especially species that are scavengers like hogs. Don't eat mammal feces or raw intestines. Or high meat.

You can safely eat the fish. Above all do NOT throw it out. Package it carefully and send it overnight express to me.

Yum.
Naturally, Don

Bears are mammels and they eat quite a lot of fish and they are fine.

High meat hasn't got anything to do with the parasites. Aging meat doesn't generate any of them.

Rubbish...
I love high meat every once and a while.
An abundant source of flora should keep parasites in check.

My opinion on what you should do is based on my experience with raw fish.

Currently I eat previously frozen salmon that has been thawed in the store. I also eat fresh shellfish like clams and sometimes oysters. In the summers when salmon is sold fresh, I freeze it for 7 days at -5 degrees Celcius. Similarly, if I buy other fresh fish like cod, I also freeze it for approx. 7 days at -5 degrees Celcius.

Last summer when I was cutting into fresh salmon I found a few tiny white 1 cm wriggling worms. After this I decided it's best to freeze the fish and kill the parasites. I've read anecdotes in biology textbooks that some parasites have intermediate hosts in fish but also parasitize humans. For example, the flukes.

The 7 days at -5 degrees celcius procedure is what I read online to be the standard for sushi preparation for commercial sale. Ideally I'd eat fresh but I figure freezing fish and the loss of nutrients that results is better than eating live worms. Interestingly, I don't freeze the grassfed beef that I eat.

I sure don't.
There is a species of crab-like parasite within some oysters that I got last fall.
I ate them separately.  ;D
