I LOVE grassfed chuck so much. It is so tender and flavorful. The inter-muscular fat tastes so good. I also like how it is often the cheapest cut, although sometimes the arm roast portion costs a little less.

I have no clue! I've been wondering for a while which parts would be the nicest.

When I buy muscle meat I just get the cheapest x]

I always get the cheapest as it doesn't matter to me which cuts I get, they all taste fine when raw.

i had a t-bone pasture raised in arizona on grasses and oily jojoba nuts,
it was so delicious, greasy(in a nourishing way!) and tender i was amazed...........thats the only cut besides ground round and g/f ground beef i have had, i also love liver, probably my favorite otherwise

Whatdaya mean they're not cuts? haha i cut them out and eat them, easy breezy lemon squeezy!

Fine then,  :P I like the tenderloin. Or if I could have the whole leg so I could get the marrow...haha I'm not much on muscle meats, I prefer organs, fat and marrow!

I have some in my freezer, haven't busted them out yet. My aunt says her dogs like them ok. I've heard mixed report.

Fowl lungs are pretty commonly eaten cooked in the part of south america my mom is from. Pulmones is the name, which is spanish for lungs.

How about texture? Do you have any preference to tender or tough cartilage meats?

I used to be picky about texture, often throwing away part of the raw ox tongues I got, for example because they seemed too gristly etc.. But after 3 years on the diet, I no longer cared and ate the whole tongue etc.

Now that I am on raw paleo, I actually notice taste differences between the different cuts. When I ate cooked meat, all of the cuts tasted the same to me.

I get 85/15 grassfed mostly, or 90/10.
