Blue lines on Bison tongue?

Why are there two blue lines on my bison tongue from Northstar Bison?

some kind of ink/stamp. pretty common with certain companies. (Not just tongue... or buffalo etc..)

The ink is safe to consume (or at least that's the claim made by USDA inspectors). I remember being told that the ink is made from berries but I can't recall exactly.

You are correct.If you use a ink which is passed by an inspector then it will not be harmful.
