Pickled Animal Parts

I recently made a broth of goose feet and head. I stuffed an entire foot into my mouth and sucked off all the gelatin, spitting out the bones. I then thought I'd like to try pickling the feet and head but I'm under the impression that most recipes recommend boiling these parts then pickling them. I'd like to stick the head and feet into a pickling solution and just let them break down slowly rather than using heat but I'm not sure what solution to use or if this is dangerous.

Does anyone know of a recipe or technique for pickling animal parts?

    It's already boiled, right? I mean you made a broth of them, so that means cooking?  I found this video for pig, although I think pickling is for preserving and not for breaking it down.

    Closest I've come is ceviche, but meat and fish break down in me more un-pickled.

Yes, I did cook the goose but in the future I would like to experiment with other techniques that do not require cooking.

Although I think pickling is for preserving and not for breaking it down.

Thank you for the clarification. I don't have experience with either which explains my confusion.  :D
