My first experience with raw meat.

A few days ago, I bought some organic beef steak and soaked it in the fresh-squeezed juice of a few lemons and limes for a few hours. I did this to make sure that the harmful germs on the surface of the meat would die.

The result was unpalatable. The taste of raw meat is completely different than that of cooked, but I'm not sure if the lemon/lime juice made it better or worse.

So I put the rest of the batch in the oven and cooked it a bit. After cooking it, it tasted like regular cooked beef but very sour because it was steeped in the acidic juice for a few hours.

So now I am using the batch as part of a raw organic salad, so the other ingredients dilute the intense sour flavor!

Beef in lemons and limes sounds so nasty.

Why not just sear for 30 seconds? then 20, then 10, then 5, then none?

You mean just sear it for a few seconds on a cast iron skillet on high?

The intense acid in lemon juice denatures the proteins in the meat. It's not exactly raw. I love it myself though!

If you do that with fish and herbs it's ceviche and I think quite yummy.
Do that with cow flesh - eeks.

If you want to try that same steak completely raw, just make paper thin slices and put them in your mouth. Make sure the stead is grass-fed ok?

Congratulations on giving it a whirl. This whole thing is a whole new skill set and has what I'm discovering to be a long learning curve. It's worth it. Try again - but leave the lemons and limes for fish.  ;)

There are no "dangerous" bacteria on the surface. The main concern should be on whether the meat is grainfed or not. If it's grainfed or grain-finished, it makes no difference as to whether it's organic or not, it should be avoided.
