fermentation and goitrogens

Hi. I would like to know what sort of vegetables can be fermented from a raw state which don't contain goitrogens. I have recently heard that sauerkraut contains alot and that it should be avoided for this reason.  Any thoughts. I am looking mainly into probiotic substances that don't necessarily require refrigeration(at least for a good while).
