Weight Gain?

Ok guys.  Healing up.  Trying to put back on some weight.  Problem?  I am using MASSIVE amounts of calories.  Like upwards of 3500 a day.  I have had to resort to a lot of cooked, sometimes junky food to get in these types of calories.  My digestion is healing but is still somewhat shot.  Especially on the raw protein/meat or nuts digestion.  Fat digestion is improving but still sluggish.  I am needing huge amounts of carbs/sugar right now as well.  So question is; does anybody know any good ways to get in large amounts of calories without bingeing on the junk too much?  Either way, I need to eat.  Have access to most raw paleo foods and raw dairy as well.

I'm just a skinny little girl, so maybe my experience doesn't apply.
But just in case, I started at 125 pounds.
That was 3 years ago,
I slowly but surely ended up dropping to 103, that was a recent weigh-in at the doctor's.
Then I introduced a lot of raw goat's dairy.
Weighed myself at my naturopath's, 109.
That was literally a few weeks of raw dairy, I seriously COULD NOT hold weight before that.
And my body can't handle cooked food, so I couldn't just resort to that either.

If you do dairy gaining weight is easy. Have a milkshake in between meals consisting of: Milk, cream(a lot), eggs and either sweet fruit or honey (quite a bit of it).

Oh and 3500kcal doesn't count as massive imo. Especially not if you're working out. 5000-6000Kcal a day is pretty normal if rapid weight/strength gains are the goal.

300+lbs strongman eat up to 15000kcal a day. Now that's massive.

For me maintenance level is around 3200Kcal a day.

Goat milk and avocados are the best things I know of for gaining weight. Bananas can help a little bit.

My body can't handle dairy that isn't raw.
But we're all different, and I'm very weak.
Take from that what you will.

My uncle by marriage really made me proud when he was talking to me about protein shakes.
He offered me some of his, because I was hungry.
I said, "Sorry, I get really bloated and at least a little bit sick if I drink that."
Because I had tried many protein shakes before, with no success.
I told him about a raw protein shake that I had found, that did work for me.
He asked me to send him the name of it as well as where to get it.
I said, "Well, its pretty expensive. If that one works for you, why switch?"
And he replied "I spend the money to get what's best. If you can't handle THIS one, yours must be better."

My memory sucks, so my wording isn't precise, but you get the idea I hope.
I respect him. My respect is pretty hard to earn.
