your common household freezer does not go that cold...  makes you wonder about all of the hoopla over freezing your foods.

things like fish, in order to be considered "sushi grade" (note: the fda has no standard for sushi grade) are flash frozen on the boat, to much colder temps than that...  this is what effectively kills the "bad stuff", and makes the fish generally safe for public consumption at your local "shady" sushi joint. 

does frozen meat taste different?  sure, just slightly.  is it as bad as what some people think?  i dunno...  but i don't always want some dried out, moldy hunk of high meat for dinner...  i opt to freeze most of what i buy, and eat it shortly after thawing.

It does. My common GE refrigerator is set for 0F in the freezer.

but i don't always want some dried out, moldy hunk of high meat for dinner...  i opt to freeze most of what i buy, and eat it shortly after thawing.

FYI I started doing fresh everything recently. I keep all my food (beef fat, meat) on racks in a fridge and they do dry out slightly, but they're definitely not high meat.

I get shipments of beef fat every other week, so it sits in my fridge for 2 weeks usually and always smells fine and just dries out a little.

I typically buy 3-4 pounds of beef, and 3-4 pounds of lamb and keep that on racks too. It develops a slight odor and dries out but it's not a high meat odor.

However when I used to cut up my meat right when I got it and put it in jars, it definitely would smell.
