Nice! I would like to try more unconventional protein sources like this. I know a guy that raised mealworms for himself for a short time.

(How long before someone here questions the paleo purity of the ingredients and the crickets' diet?)

Heh, yeh I actually thought that myself.  I think this company would be much more badass if they just sold the actual flour with out all these fancy ingredients and then branched out into other types of insect flours.  I would definitely be interested in eating all types of insects and larvae if it was sundried or dehydrated with a fan, that's probably all the processing I would want, but flour is a good intermediate for other folks.  I should probably consider trying that with as much black solider fly larvae as I produced and then thoughtlessly let freeze last year.

There are companies that sell freeze-dried insects, but you could probably make your own freeze-dried insects on an uncovered cookie sheet in the freezer. Just leave them uncovered until the ice sublimates out.

I wonder what the best insect-raising diet would be if the insects were for RPD-human consumption?

Depends on the insect's normal wild diet, I'd guess.

I think in their FAQs it says something about working toward just selling the flour at some point.
