New favorite organ meat
« on: May 05, 2014, 06:36:59 am »
I just tried my first raw beef lung. I loved it. Getting over the fact it cannot be effectively chewed or picked up with a fork, the taste was pleasantly bland, even a bit on the sweet side. The texture was what I enjoyed most, it was so fluffy and light. Like a meat version of the aero chocolate bar. The parts with bronchial tubes were fun to chew on. I also had a blast dividing up the 8 pound monstrosity into portions before freezing. Note: a very sharp knife is needed. I even found blades of grass that the beast had inhaled, a nice confirmation that my meat is certainly grass fed. Apparently the farm uses the throat method of slaughter as I found a couple small pools of blood in the lower section.

On a lighter note, I just discovered that raw scallops taste about a million times better than the cooked ones. I expected as much, but this was really dramatic. And I loved the cooked ones, but they are certainly robbed of all traces of delicious flavor that is hidden in the raw scallops.

What are some of your favorite raw organ meats?
My basic health philosophy:

1. If it is advertized on TV, don't touch it.
2. If it is recommended in the news, do the opposite.
3. If it makes most people afraid, it might be good for you.

Hmm, you've reminded me that we need to try lung! Thanks for the suggestion. That and tongue are next on the list. The only other thing I've really wanted to try are testicles. I think beef liver is my favorite right now. Heart always tastes like regular muscle meat but with a weird twist. I instantly loved liver the first time I had it. Even though it does have a burning taste that really hurts my throat when I swallow it ... I've meant to ask on here about that, but I keep forgetting. I wonder if it's just the metallic flavors from the blood? It's the only reason I can't eat it more.

I agree about scallops. They taste similar to me between cooked and raw, especially the sweet flavor. But cooking scallops does bland it up - quite a loss of flavor to say the least. Shrimp are the same thing - more flavor. And I love how much creamier they are when raw, almost like butter.

Whenever I open up salmon heads, there's like a very mushy white "snot" that I want to assume is the brain. But when I google'd images of fish brains, they were obviously a brain. Sooo, I want to say I've had brain, because I eat just about everything I can find - eye goo and all, but I'm not sure. Either way, brains are mainly fat, and fat is good for the brain, so it's no wonder brain would be good for ... the brain. ;)

I always hear that kidney tastes like piss, so I'm still skittish on trying it.

I like land animal organ meats. I like bone marrow, liver, brain, sometimes kidneys. (beef, horse and goat usually)  But the most often organ meats I eat are entire animals, small shrimp, small fish, clams and oysters and other tiny creatures.  Seafood rocks for me, I live in an archipelago so I get a lot of fresh sea food.

I particularly love the taste of raw tongue and raw marrow.

I can't say that I have a favorite. I eat lots of liver, fair amounts of kidney and heart, brain when I can get it, small amounts of spleen although it has a very strong taste, lung when it's available... I plan on taking up fishing again this summer to make sure I have access to fresh meat, so will be eating more fish and will turn bones and skin into broths.

Wow so my supplier of beef heart actually sold me 2 lamb kidney, I thought they were small hearts which looked weird to me, I never had kidneys before. So when I tasted it, I was expecting an amazing juicy beef heart taste and I could clearly tell it wasn't tasting how it should, so I thought, is this a sick animal, a very bad thawed heart? NOPE it's a freaking KIDNEY omg does it taste like CRAP! even the kidney fat doesn't taste good despite looking very similar to beef heart fat. I'll have to tank this down with a LOT of turmeric, normally I would eat this plain but I really cannot get past this awful taste, I'm no fan of liver but liver is a hundred times better and so is rancid fatty high meat trim compared to kidneys. Lucky me, I was expecting a big deliver of kidneys and so I won't order these, I would have never been able to stomach it.

There, there, kidneys aren't all that bad if you are expecting them to taste like kidneys, but if you're expecting heart, then I could see how you'd be put off. Lamb kidneys were my first raw offal, followed by liver, heart, brain, and various glands.

Raw kidneys are best eaten when absolutely fresh. They do have a certain unpleasant taste for newbies, especially when aged, but that disappears once one gets used to them.

I notice a huge difference between grass fed and grain fed kidney. The grain fed ones have a clearly toxic taste and smell of foul urine. But the grass fed ones taste clean and have no odor.

It's a grass-fed organic kidney, frozen thought. For some reason I tried frozen beef heart and fresh beef heart and i prefer the frozen ones better... I'm having a fresh beef heart aging and it just doesn't smell appealing while my thawed frozen beef heart tasted really good but it come from a different provider and different batch so maybe its why. I tried their frozen beef heart as my first time and it was really good and then that fresh batch is just off.

So much to my surprise, I devoured the living hell out of that kidney, it grossed me the hell out before eating it but then when I added a ton of turmeric to the point that my whole room smell like turmeric, I ate it all to the point I'll probably be sick, even ate the pee tasting fat that I initially planned to not even eat.

Verdict: Turmeric makes pee taste divine, nothing to do with my body needing a kidney repair, even though all my organs are likely severely damaged, including kidneys, no wonder with so many worms living in my gut.

That's interesting about condimenting with turmeric + raw kidney.
I know iguana would disagree with that method (not instinctive).
But hey, if I had a patient with kidney problems, that might be a treatment method.
Thanks for sharing.
